The fisheye effect is a non-issue for most games. The majority of games draw your focus to the center screen, and so the peripherals, while adding information that you previously didn't see, mostly serve for immersion. They can let you know about an oncoming enemy, but in the end it's about seeing more, not focusing on the wider areas. You don't turn your head to the outer screens, you turn your character to the outer screens.
Look at some of the Youtube videos and focus on the left and right 1/3rds. You'll see the distortion, and it's really up to you whether or not it seems like a big deal.

Open up the movie in VLC and pause it. Go to Tools -> Extended Settings, and under video look around and find the "Wall" options, and set them to enable with 3 columns and one row.
Maximize the respective windows to each of your monitors and watch the peripheral ones closely. You're the only person that can decide whether or not the distortion is an issue. In most games you'll be in such awe at the awesomeness you won't even notice.
And so why do most people choose 3*16:10 instead of 3*4:3 or narrower aspect ratios? Simple. Wider is better
