There is a performance setting in Unreal Engine games that allows you to force the game to upscale a certain percentage. You have to use it with a set percentage lower than 100%.

"UpscaleScreenPercentage"

So maybe someone has used that in a commercial game.

Console games, sure. PC games, I doubt it. At least not in any PC game that also supports 2560x1600 out of the box.
