Someone over on the official forums for the game wrote a neat little config utility that handles changing some things that aren't available in the game menu (it pretty much just automates making the ini tweaks) - including the FOV settings. There's various options to bind it to the movement keys so it gets re-applied any time you move.

I've got this hack but its not working. I have the required .NET framework 3.5 and my config files are in the correct place. I'm trying to use this with the Steam version and with all DLCs. Has anybody here had difficulties like this?

It works fine for me on Steam with the first DLC (although I'm not bothering to play in Eyefinity because of the stupidly big main menu). It defaults to running in administrator mode, so I assume there's no problem there (I'm sure you checked that already). I did have to reset my key bindings in game to get the bindings bit at the bottom to unlock (it was just blanked out before that), but other than that I haven't had any problems. Is it the configuration utility that's not working properly (as mine didn't at first), or is it just not doing anything in game?
