I am a SoftTH user and have a set up with one 22" (1650x1080) and two 19" (1280x1024).

I want to buy a 5850 or 5870 and a active displayport adapter. Is it possible to run Eyefinty with these different resolutions?

Not currently. Just like TH2G, EyeFinity needs symetrical display resolutions.

I will tell you though, you can still use SoftTH with a 5000 series card if you are looking to upgrade your gpu. and you only need one card if you are interested in that department.
