xAlex79, I have an idea. Since the game takes the Aspect Ratio from your main desktop resolution to make the FOV, you could make a custom resolution that's the same AR as all 3 of your monitors.

4360x1440 is your playing res, so that like 3 something as an AR. So lemme do a conversion to a smaller X value to actually fit within the limits of the main monitor.

4360 2560 X
1440 0846 Y

So you need to make a Custom Res of 2560x846. It's roughly the same AR.
Use this Guide to make the custom res. You can also try this Tool which will do most of the manual work for you.

Now after you have your resolution, run change the desktop to it. Launch the Game with you current SoftTH settings so the game should launch in 4360x1440.
You should now have a non-stretched FOV. Try it out.

Spanned across the three screens I am not sure if the actual game was stretched or not since servers were down it did look stretched. .. but UI was even smaller and pushed in the top left corner.

Softth 2.07 doesnt work for me, it stretches my normal desktop resolution event if in game it says its eyefinity resolution instead of being Hor+ and the UI is also at normal desktop size and is pushed to the left. I am on a PLP setup. :(

Sounds like It's doing the UI elements from your desktop resolution too. The only way I'm seeing to do this is to put your desktop resolution magically at your triplehead resolution or get very close to it.
Try adding 4359x1440 (4360x1440 cant be used, because softTH needs it). But I'm pretty sure you cant add resolutions bigger than the monitor itself, but i might be wrong and their might be good scaling on amd cards now.

Another thing you can try, is putting your left or right monitor as your main, then running softTH configuration and running the game. That may move the hud to the right spot.

I was able to get it to work somewhat. You have to set the game in windowed mode and then stretch the sides manually to cover your whole desktop and it does give you Hor+. I guess this will have to do untill SoftTH or AMD fixes P/L/P.

I was in the beta for this game since the start of beta testing. Played hour and hours.
Especially, as the game progressed. But, with all the time, money and effort they put
into this game... I expected more then a WoW knockoff. This game is more single player
then MMO. Maybe SMO (Slightly Mutiplayer) $60 for the game and $15 a month, lol
Hell no!! Save your money go buy Skyrim, you'll enjoy it much more. This is a MMO Fail!

Just my impression of it.
