Just wondering what is the best way to setup,1 screen for windows use and 3 screens for gaming ?

Why would you want just one screen for Windows?

You can do this through Profiles. You can disable the outer screens and just have the center. You can also set up 3x1 with Extended desktops. You can then pick the center monitor as the "primary." That puts the Start bar and your icons on that center monitor.

Yes just set everything how you want it and hit 'Apply', then go up to profiles in the top right and save it as a new profile. I assigned a hotkey for each setup I wanted too, Alt+F1, Alt+F2, Alt+F3 - for Triple monitor extended desktop, triple monitor Eyefinity, and dual monitor extended desktop when I feel energy conscious.

Yeah profiles work correctly now since the 10.3 drivers. Set them up in the ATI CCC profile manager and then you can apply them on the fly in one of three ways.

Go into the profile manager manually and turn it on
Create a keyboard shortcut
Just right click the ATI icon in the task bar area and navigate to your profile and click it.

I turn off the outside monitors sometimes during extended web browsing to save power, and I change from eyefinity to landscape mode when using photoshop as photoshop seems to get all messed up in eyefinity mode.

I also have a 4th monitor (my hdtv) hooked up and the profiles let me turn it on/off easily to watch movies.
