I'm in a somewhat similar position, still on two GTX680s in Surround. I had been waiting to see what the performance of the AMD 4-series cards would be like, but it seems AMD has gone for the price/performance market this this round, not the top-performance needed to drive surround res.
At this point availability of everything except the Founders Edition 1080s is minimal, so if you /must/ get a card now that's pretty much your only option. However, you'd be silly to do so, because the FEs are significantly more expensive for no improvement in performance. nVidia are basically gouging early adopters. If you can wait for a while, AIB partners (eVGA, Asus, MSI, etc) will have reference design boards (same clock speeds as the FE cards) available, giving you the same performance for cheaper, and also non-reference designs with improved power circuitry and better clock speeds. Going by the 980 generation, cards to watch our for would be MSI Lightning, eVGA Classified and things in the Asus Strix range.
