I've bounced from 3x1 Landscape and 3x1 Portrait.
I have likes and dislikes about both set-ups. I will say it is dependent on the game I happen to be playing.
If I watch a movie on it in Landscape, the two outside monitors don't really show anything, as the movie fills the center monitor. In Portrait, the movie fills the majority of all three monitors. However, the bezels are there, and eventually I started to not like the bezels being there for TV/movie watching. I've since added a projector, and third video card to drive it, to watch movies/sports - 84" of mostly HD glory!
In games, the bezels tend to fade out, in time - you just don't notice them as much.
With landscape, obviously you get the massive side to side view of things, which is mostly useful in outdoor areas of games. Indoors (say walking through a dungeon) the walls can feel like they are closing in on you, which really isn't that bad - you KNOW you are in a dungeon.
As for portrait, I like the vertical height you gain. If you are walking through a city with arched walkways, tall buildings, etc, you get a better sense of how immense the place is.
I think I would really enjoy having 5x1 Portrait, but would have to switch to AMD cards, and buy two more monitors.
You could look into getting a triple monitor stand, like the ones advertised here - obviously more money would be needed. You could with some thinking and planning, build your own stand.
Make sure your current monitor can pivot to portrait, if going to triple monitors is something you want to try.
Also, you can search Youtube for "3x1 portrait" or "3x1 landscape" and see a lot of videos. It'll give you some idea of what to expect.
