I have 2 30"s and I am planning to pick up another one and run 3x30". The only problem is that I can't push 12mp of display in all games. Because of the small pixel pitch of the display if I run non-native at 1920x1200 it actually doesn't look that bad. I'm using the video card as a scalar because my displays don't have built in scalars. Would it be possible to run my 3x1 display group at 5760x1200 instead of 7680x1600?

Yes !
Nv Surround setup will create a list of resolutions supported by your system: not only native res but ALL single-screen resolutions that your monitor supports, PLUS their triple-screen counterparts, PLUS their bezel-compensated versions. From there you can game at any resolution that you want, including lower-than-native surround. 8)

And that scaling is done by the video card? My concern is that my monitors only accept 2560x1600 and 1280x800, other resolutions needs to be scaled by the video card.

Yes, the graphics driver takes care of all that. Right now my system fully supports all sorts of resolutions that my monitors never knew even existed

One more question that I think you already answered but I hadn't thought of. I can run my desktop at 7680x1600 and then when I load up a game it will have the lower res options for me to select? In other words I won't need to run my desktop at non-native to be able to run games at non-native, right?

I just want to make sure this is going to work seamlessly before I commit to buying the last screen and build myself a stand for 3x30" As far as the stand goes I have a design with 8020 aluminum that I will post up here when its built. It should cost under $200 and be much stronger than any of the stands you can buy. Im expecting it to support up to 66lbs per monitor pretty comfortably (limited by the vesa 100 plate and how strong the desk you are mounting it to is).

Right !
The driver hands a list of resolutions to the system and from there on you can use them however you want. In-game res's and desktop res are independent so you can ajust each precisely how you want it. It's prettty much the same support and flexibility as with a single screen, really.

Wow that's actually cool. If I only wanted 3 displays, I would go with nVidia.
