I am trying to run Half-Life 2 using my 3 monitors to span one screen but I can't get any resolutions higher than 1920x1080 to appear in the game. Also, the only aspect ratios offered are 4:3, 16:9 and 16:10. I'm running Nvidia GTX 760 2GB with 3x Viewsonic VX2250 displays, Intel Core i7 4770k, ASUS Z87 Gryphon motherboard.

I know it says that HL2 is supported "native" and I have seen lots of people posting online about running this game with triple monitors but I can't figure it out. Thanks.

I think you're native resolution shows up under the "16:9" AR. Try looking there (of course, make sure that you're actually using Nvidia Surround to span your 3 monitors into one large display before starting the game).
