Is it possible to designate one monitor as an instrument panel in any flight simulator?

Well someone else in the family plays Flight Simulator 2004 (FS9) quite a bit, and a while ago I had two CRT monitors lying around so I decided to try dual view in Flight Simulator. You are able to set the views of each monitor independently, by memory you have to move the mouse to the screen you want to change the view in and click before you cycle views. You then cycle to the cockpit view, and if you want you can move the joystick hat down so that the entire screen is taken up by the instrument panel.
