I use FSX on 5980x1080 Eyefinity, yes there is a bit of stretch on the side Monitors, i found no fix for it.
A few things, you should do:
Tweak your FSX CFG File with that:

otherwise, it wont show up and FS will respond with issues.
If your Runway,PAPI etc Lights are to Big:
Insert this into your FSX CFG File under the [DISPLAY] sextion:
RUNWAY_LIGHTS_SURFACE_SCALAR=0.9 //Runway Lights
RUNWAY_LIGHTS_VASI_SCALAR=0.9 // VASI Lights
RUNWAY_LIGHTS_APPROACH_SCALAR=0.9 // Approach Bars
RUNWAY_LIGHTS_STROBE_SCALAR=0.9 // Strobes
And install this Light Textures, just copy in your FSX folder and replace, may BAckup your orgs.:

FS Loads up the menu faster, because he is not loading the default flight fully before the menu appears.
Tips:
Run not in DX11 Preview Mode, FPS hit, and problems with some addons.
Set Framerate to Unlimited, and limit it to 30FPS with an external Limiter, i use RadeonPro. (Under Tweaks, Dynamic Framerate Control)
Dont use the Antialiasing tick in FSX, it hits your performance, i use SMAA Ultra with RadeonPro. (Under Visual)
You can also use SweetFX for eyecandy, also set in RadeonPro. (DL SweetFX set path in settings)
