I am using 2x DVI + DP for eyefinity atm.

A year or two down the line, I want to get an additional 30" for RTS games. Would I be able to hook it up to the remaining HDMI port and switch between them seamlessly?

I've been researching this myself as I also have one 5870 but I'm tired of watching movies on my 21.5". From what I understand, on one card, they can all be hooked up, but you can't display them at the same time. You can always switch to the 30" though, it'll just disable the others.

This is my understanding too. The DVI/HDMI ports can only run two screens simultaneously, but you can have more connected and activate/deactivate screens. Might be a hassle though.

I dont mind disabling in the console. I just hate having to plug and unplug cords. I dont know how 30" connect. I hear it uses a dual-link DVI, which sounds like it takes up 2 slots on the video card. But I know people have been running 3x30 with 5870s, so its probably different.

Dual-link DVI is still one cable, you just need to make sure that its a dual-link cable you are using (with extra pins in the middle). :)
Here you can see the difference in the pins on the connector to identify correct cable:

No no, the pci card connected to your 30" would be used to maintain the 30" display while still using the Eyefinity setup underneath so you don't have to switch back and forth. However, the graphics would still be rendered using your 5870 should you choose to display them on the 30".
