Is there a way for me to bind a key to toggle between windows picking up my screens as one big screen and 3 separate screens?

Yes, make two different profiles for Eyefinity group setting and for Extended Desktop setting and bind Hotkeys to each Profile. Et voilĂ !

Alright I tried that but it doesn't work :(

They both revert to only using one of my screens or mirroring them.

Sometimes i have to load a profile a second time to get it to arrange the screens properly. Though MUCH less frequently with the 10.5 drivers.

But Falcon1 is correct.

Have you tried to do a fresh and clean install?

Uninstall all ATi drivers, tools etc., then use DriverCleaner.net/DriverSweeper and after that install the newest Catalyst Suite.

I actually just reinstalled my OS so the ATi drivers should be working perfectly.
