The title says it all. Would this be a viable setup to push 5x1 6000x1920? My biggest concern is the x2's lack of E6 support. I'd like to think that there wouldn't be issues connecting to the single (E6) card, but it's a lot of money to spend w/o knowing 100%.

As long as each of those GPUs has 2gb vram then that should be viable for 5x1 for most games. 11.5 megapixels is a lot to push tho. 6970 trifire (6990+6970) or quadfire (2x6990s) should be considered. If you're wanting to play bf3 on 5x1 I recommend 2 6990s. 5x1 actually provides situations where the 4th GPU is noticed over tri-fire (I've found this for bf3, bfbc2 and crysis warhead).
