Most, actually I think all, of those games have pre-rendered 2D backgrounds. Unfortunately, that means there's no way to play those games in widescreen. With 3D games you have always have an internal representation of the entire world and you're basically just changing how much you can see of it. However, you can't change how much you can see of what is essentially a photograph.
Best thing you can do is play the games pillarboxed (black bars on the side so that the picture isn't stretched), which would rely on your video cards scaling settings.
I never figured out how to get my screen to display 4:3 like that. I have an LG Flatron W1952TQ, and my vid card is an XFX GeForce 8600 GT. Not sure what you mean by "scaling settings".
