That's an odd aspect ratio, you should see 16:3 which is 5760x1080

Well I run a 32" and 2 - 24" monitors, you do not really see a difference on your peripherals unless you actually closely paying attention to transition. But larger the difference the higher the chance of picking out the differences I am guessing though.

Theoretically running 2 Eye 6 cards would say you can use up to 12 monitors, But as I have never tried more than 3 I can't confirm that. But if not using Eyefinity at al,l you will be able to get away with Passive adapters no problem, for extended.
