It really depends on the game. Some stretch to fill the fullscreen which is not ideal, whereas others are fine. If you go to the Games Database, you can search for games you might be playing already and see if anyone with an ultrawide monitor has recorded how the game behaves with 21:9 to get a feel...

It looks like this is happening in aspect ratios over 16:9. Are you using Nvidia by any chance?

Wow this game is really broken for Nvidia Surround. I am running 3 x 16:9 monitors. When I deselect Windowed Mode, I get no resolutions to choose from when 16:9 is selected, and the highest resolution when 16:10 is selected is 1680x1050. So basically I can't even run it in one monitor at its 16...
