There are two available solutions, depending on the version you're running, please check below...
1) V. 1.01
Thanks to HaYDeN for this multi-monitor solution ...
You'll need a no-cd .exe by SKIDROW (update 1.01) ...
1- Download Cheat Engine.
2- Download this table and unrar it in your PC.
3- Edit "graphics" file at C:\Users\...\Documents\Ubisoft\Driver San Francisco setting fullscreen= 0 and a single monitor resolution (any), then make this file "read only".
4- Run Driver San Francisco.
5- Press Alt+Tab, start Cheat Engine, select the game process (top left) and load the "dsfrancisco" table (File >> Load).
6- Right click on the first parameter (ASM move array pos), then select Change record >> Value, type 6 (you may also try 5) and OK.
7- Check the box on the left to freeze the parameter.
8- Alt+Tab again, then in game menu "Settings", "Video", select the multi-monitor resolution you want (you may need to quit to main menu and go back to "Video" menu to enable the multi-monitor resolutions option).
9- Alt+Tab, back to Cheat Engine, following what you did to edit the first parameter, its time to change Aspect Ratio (set it to 4.8 for 48:10 resolutions and 5.33333 for 48:9) and FOV (use 0.029 for 5760x1080 i.e.). Dont forget to check the boxes on the left of each parameter to freeze the new values.
You may also try to edit (unstretch) GUI and Movie Widths by setting these parameters to your multi-monitor resolution / number of monitors you run, and centering the GUI and Videos changing the values of each respective parameter to 1, but ive experienced some issues when trying to run the GUI and Video changes.
10- Press Alt+Tab once more to the game, set it to fullscreen in game menu.
11- Play the game.
Note: On Steam version, try to delete the ubiorbitapi_r2.dll and ubiorbitapi_r2_loader.dll that are included in the SKIDROW files, it should work fine then (thanks to xxdenialxx for this tip).

Follow all the steps described above, but using this cheat engine table ...
